HOW TO MAKE IT:
Thaw Cajun Chicken Pasta meal in the fridge the day before cooking.
Heat 1-2 Tbsp olive oil in a large skillet over medium heat.
Add chicken to the pan and brown for 1–2 minutes on each side (can dice before cooking to speed cook time). Transfer to a plate and set aside.
Add remaining contents of the bag, 1 cup rice, Cajun seasoning to preference, and ¾ cup chicken broth to the pan and stir. Bring to a boil.
Reduce heat to a simmer (medium-low), return chicken to pan (place on top of rice), cover, and cook for 30 minutes until chicken is cooked through and rice is tender.
Fluff rice with a fork and serve chicken and rice with a scoop of mangoes, fresh cilantro, and lime wedges.
