Cilantro Lime Quinoa Fajita Bowls

WHAT YOU'LL NEED:

  • 1 Citrus Pear Chicken Fajita meal
  • 1 can black or pinto beans (optional)
  • 1 tomato, diced (optional)
  • ½ avocado, diced (optional)

Cilantro Lime Quinoa:

  • 2 cups low sodium chicken broth
  • 1 cup quinoa, uncooked
  • ½ small onion, diced (optional)
  • ½ cup cilantro, chopped
  • ½ of lime juiced
  • Salt and pepper to taste

Cilantro Lime Sauce:

  • 1 Tbsp dried onion
  • ½ cup chopped cilantro
  • Juice from 1 lime
  • 1 tsp garlic powder
  • ½ tsp celery salt
  • ¾ cup Greek yogurt

HOW TO MAKE IT:

Cook Chicken Fajita meal according to directions.

For the Cilantro Lime Quinoa:

In a large pot combine broth, quinoa garlic, and onions together.  

Bring to a simmer and cook covered for approximately 15–20 minutes, or until all water is evaporated.

Remove from heat and stir in cilantro and lime juice. Add salt and pepper to taste.

For the Cilantro Lime Sauce:

Whisk or blend all sauce ingredients together until smooth. Add 1–2 Tbsp of water if you desire a thinner consistency.

In a bowl, layer the Chicken Fajita meal, cilantro lime quinoa, and any other toppings of choice. Drizzle with cilantro lime sauce.
