HOW TO MAKE IT:
Cook Arroz con Pollo meal according to directions.
Blend cooked chicken meal (with sauces) and 1 1/2 cups of rice and mozzarella in a food processor or blender. Blend until consistency of a paste similar to a meatball.
Use a cookie scoop or spoon to scoop mixture into a ball.
Roll each ball in breadcrumbs.
Place ball in air fryer and cook at 390°F for 10 minutes.
Top with a sour cream or greek yogurt and a sprinkle of cilantro.
