Fresh Twist - Chipotle Chicken Wraps

Take the smoky, delicious flavor of our Grilled Chipotle Chicken with you by turning it into a wrap. It’s the perfect grab-and-go lunch or dinner!

HERE’S WHAT YOU’LL NEED:
  • Citrus Pear Grilled Chipotle Chicken
  • Romaine lettuce, chopped
  • Tomato, chopped
  • Red onion, diced
  • Avocado, diced
  • 15 oz can black beans, drained and rinsed
  • 1 1/2 cups corn, fresh or frozen
  • 1/2 red or orange bell pepper, diced
  • 1 cup rice, cooked
  • 1 cup shredded cheese
  • 4 large flour tortillas


For Chipotle Sauce:

  • 1/3 cup fresh cilantro, chopped
  • 2/3 cup plain Greek yogurt or low-fat sour cream
  • 1 ½ tsp adobo sauce (from a can of chipotle peppers in adobo)
  • 1 tsp chili powder
  • 1 Tbsp fresh lime juice
  • 1/4 tsp salt
  • 1/4 cup salsa of choice
HERE’S WHAT TO DO:

Prepare Citrus Pear Grilled Chipotle Chicken meal according to directions.

In a small bowl, mix all the chipotle sauce ingredients together and then set aside.

In a large bowl, toss together lettuce, cooked chicken, tomatoes, onion, avocado, black beans, corn, and bell pepper.

Add some sauce to the salad mixture, reserving some sauce for dipping, and toss well to combine, making sure everything is evenly coated.

Warm tortillas in a microwave for a few seconds.

Layer each tortilla with about 1/4 cup cheese, 1/4 cup rice, and a heaping spoonful of salad mixture. Roll it up and enjoy!
