Fresh Twist - Coconut Rice

Rich and creamy coconut rice is a simple way to level up your rice. But be warned: once you try it, you may never go back.

HERE'S WHAT YOU'LL NEED:

  • 1 13.5 oz can coconut milk
  • 1 1/2 cups water
  • 1 1/2 cups uncooked rice
  • Dash of salt
  • Fresh cilantro to taste


HOW TO MAKE IT:
Combine coconut milk, water, rice, and salt in saucepan.  Cook like regular rice, bringing to a boil and letting it simmer until most of the moisture is gone.  You will still have some coconut fat/foam/deliciousness on top of the rice at the end, but that’s ok.  Just stir it in with the cilantro while you fluff it.
