Fresh Twist - Israeli Couscous

Fresh cucumbers, savory chickpeas, and sweet cherry tomatoes make this couscous taste just like summertime.
Pairs great with Citrus Pear Gyros.

HERE'S WHAT YOU'LL NEED:

  • 1 cup Israeli Couscous, uncooked
  • 1 Tbsp olive oil
  • 1 can chickpeas, oven roasted
  • 1/2 cup red onion, sliced
  • 1/2 cup feta
  • 1/2 cup mint, chopped
  • 1/2 cup parsley
  • 2 cup grape or cherry tomatoes, sliced into halves
  • 1 Tbsp minced garlic
  • 1/2 English cucumber, peeled and sliced
  • 1/2 cup green onions, chopped


Dressing:

  • 1/3 cup olive oil
  • 1 lemon, juiced
  • 1 Tbsp red rice vinegar
  • 2 Tbsp honey
  • 1 tsp salt
  • 1/2 tsp pepper


HERE'S WHAT TO DO:

Toast couscous in pan. Heat 1 Tbsp olive oil in a med pot. Toast couscous until light brown. Add 1 1/4 cup water or broth. Simmer with the pan covered for 10–15 minutes.

While toasting couscous place chickpeas on a cookie sheet. Roast in a 400°F oven for 10-15 min. Toss with chili powder if desired.

In a separate bowl combine all salad ingredients.

Mix dressing and toss over salad.
