Fresh Twist - Poppy Seed Spinach Salad

The key to a good salad is the right forkful. This one is topped with cheese, crisp bacon, and fresh mushrooms.

HERE'S WHAT YOU'LL NEED:

  • 1 pkg spinach
  • 1 small head lettuce
  • 1 cup grated Swiss or mozzarella cheese (or 1/2 cup parmesan)
  • 1 cup cottage cheese (rinsed and drained in cold water)
  • 1/2 lb (turkey) bacon, fried, crisp and crumbled
  • 6 fresh mushrooms, sliced
  • 1/2 cup red onion, diced

Dressing:

  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/4 cup sugar
  • 1 1/2 tsp salt
  • 3 Tbsp poppy seed dressing


HOW TO MAKE IT:

Combine salad ingredients.  In a separate bowl, mix dressing ingredients.  Slowly add dressing to salad right before serving (or let guests add their own).  Add desired quantity of dressing to personal taste.
