These crispy taquitos take our pulled pork to the next level. Now you can skip the deep fryer and make this Mexican-restaurant staple at home.
For Toppings:
Cook Citrus Pear Pulled Pork according to directions. Shred and return to juices. Preheat air fryer to 400° F.
Heat a nonstick skillet on medium heat. Spritz both sides of a tortilla with cooking spray and add to skillet, heating until softened on both sides. Transfer to a dish and cover with a damp paper towel to keep warm. Repeat with remaining tortillas.
Take 2 Tbsp of shredded pork and pack down the middle of a tortilla. Top with cheese.
Take one side of the tortilla and roll over the filling, using your fingers to get a tight roll. Roll up the rest of the tortilla around the filling to create a ¾ inch diameter taquito. Repeat for each tortilla.
Put taquitos in the basket of the fair fryer in a single layer (this will require cooking in multiple batches). Cook for 5–6 minutes, until tortillas are crispy and golden.
Serve with toppings of choice, such as sour cream, guacamole, or salsa. Enjoy!
