This homestyle skillet can be cooked in just one pan! The sweet pork, peppers, and potatoes create a hearty and filling favorite.
For Toppings:
Cook Citrus Pear Pulled Pork according to directions. Reserve 1 ½ - 2 cups of cooking liquid.
In a large skillet, combine 4 cups pulled pork with reserved cooking liquid, peppers, and sweet potato. Cover and bring to a simmer.
Cook for 15–20 minutes, stirring occasionally, until the potatoes are soft. If you notice the pan is starting to dry, add ½ cup water.
Serve with tortilla chips, fresh cilantro, and shredded cheddar cheese.
