Citrus Pear

Green bean season runs from May to October. So, next time you see them at your local market, snap them up. This flavorful dish is healthy comfort food at its finest.

WHAT YOU'LL NEED:

  • 2 Tbsp olive oil
  • 1/2 tsp red pepper flakes, or to taste
  • 1.5 pounds fresh green beans, trimmed
  • 2 cloves (about 2 tsp) garlic, minced
  • 1/2 tsp kosher salt
  • 2-4 Tbsp water

HOW TO MAKE IT:
Heat oil in a large skillet over medium-high heat.

Add red pepper flake (if desired) and stir to coat the pepper in the oil.

Add green beans and cook, stirring often until the beans are blistering and browning in areas, about 5–7 minutes.

Add garlic and salt and cook, stirring constantly until the garlic is fragrant (about 30 seconds), being careful not to burn.

Add water and immediately cover with a lid.

Cook covered until beans are bright green and crisp tender. If you want beans more tender you can add more water and cook longer, till desired consistency is reached.

Serve immediately.
