Pack in the protein with this Thai Quinoa bowl and a favorite Citrus Pear Coconut Peanut Pork Loin.

WHAT YOU'LL NEED

  • 1 Citrus Pear Coconut Peanut Pork Loin Meal
  • Baby butter lettuce
  • 1 cup quinoa, uncooked
  • 1 cup shelled edamame
  • 1 cup broccolini, chopped
  • 1 cup red bell peppers, sliced
  • 1 cup cucumbers, diced
  • Chopped cashews (optional)
  • Thai Basil Vinaigrette
  • Leftover Peanut sauce from CP Coconut Peanut Pork Loin

    HOW TO MAKE IT

Cook CP Coconut Peanut Pork Loin meal as directed.

Cook 1 cup quinoa as directed on quinoa package.

Wash and rinse the baby butter lettuce. Shell and chop edamame, slice and dice peppers, cucumbers and broccolini.

Assemble the protein bowl as desired and drizzle with leftover peanut sauce and Thai basil vinaigrette.
